My kids Valentines day lunch box.

We havent ‘celebrated’ Valentines day for about 8 years, so you can imagine why I was alittle surprised & ummm suspicious lol when I received a bunch of roses & a gift box this morning.

This past 6 months Ive really noticed a difference in the way hubby sees & loves me, I dont know if its because his noticing how im starting to respect & love myself after losing so much weight or if its because we’ve worked things out between us but his uploading photos of me onto his Facebook page,his profile pic is use two hugging & last week he was talking about having my name tattooed onto his arm.

 Anyways, Miss Hip made a heart shaped note last week – she heard about Valentines Day from the neighbours & fell in love with all the red at our local Woolies. Does she really understand why people celebrate Valentines Day ???? No, dont think so….but really does anyone????

While in the mood I prepared a small surprise for girls lunch boxes, Miss. Chic still cant read so the note had to be short & sweet, unfortunately I did end up wasting 8 slices of bread cutting them into heart shapes…….but their smiles were worth it.

I know Christmas is over,but candy canes were only 5c a bag at Kmart so I bought about 5 bags but I didnt think about how long they’d last if not eaten every day.

Our Kindy teacher read our letter to the class 3 times…..im the new classroom romantic.,…

 

{Turkish recipe} Feta cheese cake – (peynirli kek)

Cheese is loved by all in Turkey, its one food that doesnt separate the rich & poor, its always found in ever Turkish household & breakfast isnt complete without it.While feta is usually most preferred for its price and versatility, we also have ‘tulum‘, ‘kasar‘ (similar to mozerella), ‘cokelek‘ (parmesan but salty & very hard) & Lor (Haloumi) – but these type of cheese are more expensive and used for breakfast.

Last night we had guests over and among my other bakes/sweets, I made this super quick & easy feta cheese cake. Its not a large cake but very filling, perfect for picnics, snack & best of all my kids just had leftovers for breakfast!

Ingredients

1 cup of yoghurt 
1 cup olive or vegetable oil
3 eggs
100grams of feta cheese
1 bunch of parsley (i didnt use parsley)
3 cups of self raising flour
sesame seeds

Instructions

  1. Beat all 3 eggs until its light & frothy
  2. Mix in the remaining ingredients (except the sesame seeds) – mum said it has to be lumpy  but I still found it dry so  I secretly added 2 tablespoon of yoghurt and it didnt affect my cake at the end.
  3. Pour the mix into a well greased tray- I used my Pyrex glass tray, sprinkle the sesame seeds all over the top
  4. Bake at 175 degrees for 40 minutes -
Note you can add pitted back olives or diced  tomatoes for extra taste.

 

{Back to School Countdown} Fussy eaters lunch box ideas

According to our School countdown chart we only have 16 days to get organised then its Back to school for kids (and back to solo shopping for mums).

It also means I continue my complaining about Miss Hip our 7 year old fussy eater who refuses to eat anything with Cheese, salad, wholemeal, soft – hey anything healthy really.

My 5 year old (God bless her) isnt picky at all (takes after her dad) she will try anything you offer her, eat anything you put in front of her and she wont complain (unless shes in on of her “monkey see monkey does moods – & decides to copy her sister).

As with the past 2 years, my girls choose their own lunch boxes in hope they’ll have a sense of responsibility and may even be convinced/bribed into eating the lunch inside them as well!

 

The girls fell inlove with the Sistema Quaddie Lunchbox, im not sure if its the colour or different compartments but  my girls were excitedly  telling me to put ‘chopped up carrots & apples in the top compartment”.

Maybe alittle late but I did my usual online research on the Sistema Quaddie and I wasnt too impress by some of the reviews I read – the lids snap off easily, always cracking & not watertight. I paid about $15 for both lunch boxes, if it lasts a term and temps my girls (especially Miss Hip) to finish or atleast TASTE her lunch im one satisfied customer.

Last year Miss Hip wanted a cute looking Insulated Lunch Bag – Im sure most mums had the same thought in mind at first, “lunch will be squashed!”. Whether its because we always placed her lunch bag in the separate section of her bag or because she was extra careful, we didnt real have much problems with lunch getting “squished”.

For about $5 – $15 these lunch bags are very easy to clean (especially perfect for lazy mums like me!!!!), in the was with the uniforms and perfectly clean by Monday.

The only down side I found was all her recess/fruit & lunch was thrown into one compartment so I can SORT OF understand why my daughter  found it a little dull or boring to eat – its not my cooking or food to be blamed !!!

 

We tried an eco friendly stainless steel lunch box in Kindy, she had picked the style / design off the internet and yes I did feel good paying $30 for a lunch box – knowing im doing my tiny part for the environment but more importantly im teaching my children to be eco-friendly.

Unfortunately she hated her lunch box from day 1 – she didnt like the “cold” feeling when she picked up her lunch, she said it looked funny next to her friends – maybe a little young to be eco smart, so we went out and purchased a Disney Princess plastic lunch box. Her lunch box is now being used by her trucky dad!

Ive seen these reusable lunch & snack bags all over the internet, I love looking at the different designs & colours – im not sure but I think they’re all handmade (how I envy their creativity & talents). Im yet to purchase or try one, im alittle sceptical about these bags – they dont look as ‘tightly’ closed as cling wrap, so the lunch may get messy creating more problems with my fussy eater.

These bags can be purchased online and prices are about $8 +. I know you can also purchase them cheaper from Ebay (China) but dont know about the quality.

Have you tried a reusable lunch & snack bag? Recommend me a lunch box that your  picky eaters found the perfect and made them want to eat everything in it? 

Quick & Easy Muffins

A very easy, quick and yummy muffin recipe, not only do the kids get more hands on with the minimum ingredients but when im in my “very rare :P ” lazy moods, I simply triple the ingredients and add  Cheese, Apple & Cinnamon and Choc chip muffins to make 3 different flavoured muffins.

I had cherry jam sitting in the pantry which smelt a little sour (you know when its almost off…) so I added it and the taste was divine.

Ingredients:

  • 2 cups of self-raising flour
  • 1/2 cup sugar
  • 1/4 cup oil
  • 1 egg
  • Choc chip, or dried apricots, or jam or apple & cinnamon or what ever you have in your pantry

The fun bit:

  • Preheat oven at 180°
  • Throw everything into a bowl and mix till well blended.
  • bake for 20 minutes and enjoy!


Preparing for School – Lunch Box ideas

Tomorrows our first day of year 1, and we are excited lol. Bags are packed, Lunch planners set, uniform ironed, shoes polished and muffins are in the freezer.

To help me get a better picture of what Hip likes to eat and to introduce new foods, I mix a variety of sandwiches, fruit, vegies & snack on a plate. Ive learnt that what is yuck this week, isnt yuck the week after lol.

This also prepares Chic for Kindy next year, by getting her use to eating a variety of foods twice a day instead of just a sandwich (which is what she preferred.)

Today the kids had: Turkish Gozleme, Grapes, Apples and Cherry Tomatoes.

Yesterday the kids had: Mayo Swirl pasta , Kiwi, Cherry tomatoes, sauce & Kofte flattened out.
